Opening of the Highschool in 1991
In February 1990, the Sainte Thérèse Catering Highschool settles in La Guerche de Bretagne. The Headmaster is Mr Joseph Le GAL
1992/1993
The start of the year sees the beginning of the "Specialisation in Restaurant Desserts"
1993/1994
The sections of Professional "Baccalauréat" open. A partnership is created with Brittany Ferries.
1996/1997
In November 1996, the school organizes a Conference on the Future of French Gastronomy with the interventions of famous chefs – B. Loiseau, G. Paineau, J. Thorel, Y. Le Coz.
1997/1998
September 1997, the school expands. The students of "Baccalauréat" go on a trip to London.
1998/1999
The school welcomes hearing impaired students in the "BEP" and Professional "Baccalauréat" sections thanks to a partnership with Paul Cézanne Institute of Fougères.
1999/2000
Novembe 1999, le school welcomes the ANEPHOT Congress (Association of Catering and Tourism Private Schools).

2000/2001
In September 2000, the first European Section opens in a Catering Highschool in the Education Authority Region of Rennes.
The "Leonardo Da Vinci" project, an exchange scheme with foreign countries, is approved and enables 8 students to go on a training experience in Sweden and in Italy.
Organisation of the first "Festival of the Cultures of Eating and Drinking" in La Guerche with a Market of the regional products and a thematic dinner : "Bretons Eating"
2001/2002
The Headmaster is replaced : Mr Christophe GABÉ.
2002/2003
The English European Section opens in Professional "Baccalauréat". 25 students of Professional "Baccalauréat" go on a training period in Poland, Spain, Sweden, Italy, England.
Baptism of the first year of "Restaurant Cooking and Desserts" with the participation of Philippe URRACA (French Best Worker in "Pastry", 1994) and Alain CHARTIER (French Best Worker in Icecreams and Sorbets, 2000, Team World Champion in Pastry 2003).
2003/2004
New Headmaster : Mr Gérard BLOT
An Australian assistant is welcome for 3 months. First session of the professional baccalauréat in European Section of the Education Authority Region of Rennes.

2004/2005
The new "Specialisation in Reception" opens. It has a major in English which is completed with Chinese as a second language. "Stéphanie PEAN, a student in Professional "Baccalauréat" wins the George Baptiste Cup in the National Contest of Service.
2005/2006
First edition of the "Week of Taste" in Middle Schools. In January 2006 is created the "Sainte Thérèse Cake" during a contest organised by the students of the school. Baptiste DAY and Maxime DINE win the award. In March 2006 the Hotel Restaurant AR MILIN offers the students of the school the key to its doors for a week-end. Aurélie BREZEL, a student in the Specialisation in Restaurant Cooking and Desserts, wins the contest of Text Writing "The Hotel-Catering Campus". In May 2006, Stépanie PEAN, a student in Professional "Baccalauréat" takes part in the international finals of the contest George BAPTISTE in Mexico and is awarded the world third rank and the European first.
2006/2007
Some teachers of the school make a pastry show in China in a Jinan hisghschool. A XVIIth century meal, like in the times of Madame de Sévigné, is organised in the Château des Rochers, not far from Vitré.
